Are there any guilds that are most active on PST? From my research the latest raid start time for a guild that I've found is 6pm PST. The earliest I can really do is 8pm PST on weekdays. For now I'm mostly interested in getting groups. I have a 38 paladin (Enigma) that I leveled up a few years ago, but ultimately burned out on due to spending all my time LFG. I'm back now, and open to rolling another class, I just don't want to solo or sit LFG ;)

If you don't want to solo or LFG, you may have to box 2 characters. (though you may still consider that to be soloing, I guess)

In answer to your question, there is no guild that I know of that raids that late. You would be logging in at the time that DC and Temerity weekday raids are well more than halfway done.

TBH, your best bet may be Destiny. While they raid 2x a week, their prime raiding date/time is Saturday noon EST. So you would have a chance to hit that even with your job.
